Lucky Corn Chips is San Clemente’s newest snack

Surfer Josh Joseph seeks a market niche with his naturally flavored Lucky Corn Chips.

This was the headline for a story in the San Clemente paper last month.  It’s a story about a San Clemente resident who had time on his hands because the construction business had slowed down, so he developed his corn chip line.  I remember the article saying that Billy’s Deli was carrying them, and I had looked a few weeks ago, but no Lucky chips.  Last weekend I went down to Billy’s to get a sandwich and they had two flavors in stock - Soy and Jalepeno.   I chose the Soy and THEY ARE SO GOOD !!!!  The bags are kind of small, but the flavor and lightness of the chips make it all worth it.  I can’t wait to see if they will sell larger sizes, if I can order them on-line or go pick them up.  These are definately a good “find”!  YUM

This is a cheater blog post since I just blogged it on my work blog … but what the heck!  It’s a good recipe!  Our friend John brought all of the ingredients by one night!  How nice is that?  Enjoy!!

SO GOOD !!!!!!

Hawaiian Rice

 1 1/4 cup rice

2 1/2 cups chicken stock

3/4 cup diced pineapple, canned or fresh

1 cup diced ham

3 tablespoons butter

1/4 cup slivered almonds

Salt and Pepper

Cook rice in chicken stock until stock is absorbed.

Brown pineapple and ham in butter in a 1 1/2 quart casserole.

Stir in rice and season to taste with salt and pepper.

Add almonds, stir well and bake for 15 minutes in a 350 degree oven.

Serves 4-5

Last weekend I bought a Greek Chicken Pasta Salad at Costco.  It was pretty good and I knew I could re-make it ….. better :)   So … I bought the ingredients -

Greek Chicken Pasta Salad ingredients

A Rotisserie Chicken at the market

A can of artichoke hearts

Grape tomatoes

Whole grain pasta

Greek Olives (pitted)

Red Onion

Salt and Pepper

Mayo

Italian Dressing

Cook your pasta - al dente.  Shread your chicken.  Cut the artichoke hearts into smaller pieces from what they come in the jar or can.  Slice the Red Onion.  Cut olives in half (remember no seeds)   Mix all ingredients.  For the big bowl, I added two heaping tablespoons of mayo and about 1/4 cup of italian dressing.  Mix.  Chill.  Eat.

My bowl of Greek Chicken Pasta Salad

Okay… I love salsa. I love mexican food. I could eat mexican food every day… really, I could. When Mark and I were at the Fred Hall show this past March (Fishing Show) we picked up a can of this Salsa mix. When I go to the Fred Hall shows I love that there are booths that have nothing to do with fishing :) …. even though I love to fish. It’s just a nice break to look at something different. So anyway, we picked up this can of Salsa mix and I forgot all about it until tonight!
All you do is mix a scoop of the mix (they give you a scooper) with a 14.5 oz can of petite diced tomatoes. Stir, refrigerate for 30 minutes and “vwallaa” SALSA !!
AND… it’s pretty darn good!
AND … it’s made in America and is Veteran owned!

Buy some and make some salsa!
