Okay… I love salsa. I love mexican food. I could eat mexican food every day… really, I could. When Mark and I were at the Fred Hall show this past March (Fishing Show) we picked up a can of this Salsa mix. When I go to the Fred Hall shows I love that there are booths that have nothing to do with fishing :) …. even though I love to fish. It’s just a nice break to look at something different. So anyway, we picked up this can of Salsa mix and I forgot all about it until tonight!
All you do is mix a scoop of the mix (they give you a scooper) with a 14.5 oz can of petite diced tomatoes. Stir, refrigerate for 30 minutes and “vwallaa” SALSA !!
AND… it’s pretty darn good!
AND … it’s made in America and is Veteran owned!

Buy some and make some salsa!

Last week I posted on Facebook that I love Bohemia beer with lime and chips and salsa - heaven!  My kayak fishing friend Ron from Georgia sent me this salsa recipe.  It is SO easy using canned tomatoes and the food processor.  I have a small food processor, so I did mine in stages and I also added some cilantro.  REALLY good!

My favorite salsa is Herdez -

I’ve been eating it for years. 

But …. the last two jars have been very liquidy… is that a word?  More Liquid, not as many tomatoes.  I thought they were trying to save money in these tough ecomonic times.  I called the phone number on the jar and spoke to a customer service rep.  I told her that I wouldn’t be buying my favorite salsa any more, that the liquid was just too much and that I was really disapointed.  She told me they had a couple of bad batches go out from a manufacturer and she asked for the bar code and code printed on the top of the jar.

Guess what?  I received a check for $4.00, a thank you card from Hormel Foods and a list of recipes - 5 pages!!!   I am so impressed!

You know, when I contacted Del Monte about the fruit coming from China, I didn’t get a coupon, “I’m sorry” or anything … just a letter stating why they get food from China. 

Hormel - I am very impressed!!!  I will definately buy my favorite salsa again.

But…. in the mean time I got a new salsa recipe from a friend in Georgia and I will be posting that soon.

I make a mean Mango Salsa!!  I could live on mango salsa and guacamole !!

Ingredients:

For a very large bowl of salsa:

5 Mangos

5 to 6 vine ripened tomatoes – medium to small in size.

5 to 7 roma tomatoes

1 large sweet onion

2 to 3 jalapeno’s

1 large bunch of cilantro

2 limes

½ to 1 cup of prepared salsa

Salt and Pepper

Tabasco

 

How To:

Wash all fruit and vegies

Into a large bowl put the following:

1.  Dice onion.

 

2.  To pick the best mango – try to pick a fairly firm mango.  If it is too ripe it is very hard to dice.  If it is too hard, set it aside and wait a day or so and it will be ready.  The riper the mango, the more flavor.  Peel the mango and cut as much fruit off of the seed.  Dice.

 

3. Seed all tomatoes and then dice.

 

4.  Wearing gloves, cut the jalapeno in half long ways, take out all seeds and veins if you want less heat.  Dice very small.

 

5.  Add salt and pepper.

 

6.  Add the juice of two limes.

 

7.  Add ½ to 1 cup of a store bought salsa.

 

8.  Add 4 to 5 drops of Tabasco to desired taste and heat.

 

9.  Chop cilantro very small and add.

 

Stir, chill for an hour or so and enjoy.   (every ingredient can be adjusted to taste)
