Fish Sticks … for adults!
Makes 4 servings – Total time – 20 minutes
1 lb. tilapia (or other white firm fish) , cut into 1-inch strips, (about 5 fillets)
1/4 cup mayonnaise
2 lemons, cut into wedges
2 Tbsp all-purpose flour
1 cup panko bread crumbs
2 Tbsp extra-virgin olive oil
Tartar Sauce
Preheat oven to 450º
Season fish with salt and pepper
Mix mayonnaise with juice from 2 lemon wedges (about 1 Tbsp.)
To bread fish, place mayonnaise mixture, flour and panko separately on three plates.
Dredge fish in flour until thoroughly coated, then in mayonnaise mixture, then in panko.
Transfer breaded fish to a baking pan, drizzle with oil.
Bake until fish strips feel firm, about 8 minutes (mine took about 15-20 minutes for some reason ….) . Move fish to top oven rack, broil until fish is golden brown, about 1 minute. (Rotate baking sheet for even browning.)
Serve tilapia with tartar sauce and remaining lemon wedges.
My homemade tartar sauce –
About 3/4 cup mayonnaise
About 2 tablespoons pickle relish or finely chopped sweet pickles
Salt and Pepper
Squeeze of lemon juice.
Mix well and stick in the fridge while the fish is cooking
